OATMEAL BANANA BREAD


My sweet tooth is the weakest bone in my body. I especially love baked goods: Brownies, cakes, cookies, etc. Being gluten-free and vegan hasn't stopped me from getting my fix. I've developed a love for baking loafs, so expect a lot of them on this blog. Here is a current breakfast and dessert favorite of mine: Oatmeal Banana Bread. It keeps me full until lunch and feeds my sweet tooth after dinner. Below are two recipes I tried. The first one is oh-so sweet and soft. The second recipe is not as sweet, and the cake is a little more grain-y, but just as soft and delicious.

FIRST RECIPE
  • 3 ripe bananas, peeled
  • 2 flaxseed egg
  • 1 ½ cups gluten-free oatmeal flour
  • ½ cup honey
  • ⅓ cup sunflower seed butter
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda

  • Pre-heat oven to 350°F
  • Grease loaf pan and set aside
  • Mix 2 tablespoons of ground flaxseed with 6 tablespoons of water and let it sit
  • Pour gluten-free rolled oats in a blender, mix until a powder, & pour in a bowl
  • Mash bananas with flaxseed eggs, add sunflower seed butter, honey & mix
  • Add baking soda and cinnamon to oatmeal flour & mix
  • Combine banana mixture with oatmeal flour until well blended
  • Pour ½ of batter into loaf pan, add banana slices, pour rest of batter, & add banana slices on top
  • Cook for 30-35 minutes

SECOND RECIPE
  • 3 ripe bananas, peeled

  • 1 ½ cups gluten-free oatmeal flour
  • ⅓ cup coconut oil
  • ⅓ cup honey
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • Pre-heat oven to 350°F
  • Grease loaf pan and set aside
  • Mix 2 tablespoons of ground flaxseed with 6 tablespoons of water and let it sit
  • Pour gluten-free rolled oats in a blender, mix until a powder, & pour in a bowl
  • Mash bananas with flaxseed eggs, add coconut oil, honey & mix
  • Add baking soda, baking powder, and cinnamon to oatmeal flour & mix
  • Combine banana mixture with oatmeal flour until well blended
  • Pour into loaf pan, adding cut-up banana slices in between if desired
  • Cook for 30-35 minutes

FLAXSEED = EGG
SUNFLOWER SEED BUTTER = MELTED BUTTER
COCONUT OIL = MELTED BUTTER
HONEY = SUGAR
