Potatoes are my favorite vegetable. They are arguably the best vegetable on earth. Whenever I devour a potato in any of its sacred forms: fried, baked, or mashed, I feel like my insides are being hugged by Jesus. My favorite way to cook potatoes is to peel, slice, and bake. I don't like to just eat them alone (although, they are delicious on their own), so I usually include another veggie in the mix. This time, I decided to make carrot and broccoli fries along with the regular potato fries. The result? A mouth party. These are so good. I can't wait to make them again.

  • 1 russet potato
  • 2 long orange carrots
  • 1 broccoli stalk
  • Sea salt
  • Black pepper
  • Garlic powder
  • Parsley
  • Coconut oil

  • Pre-heat oven to 425°
  • Peel potato, cut into half, then slice each half into another half, and cut into desired fry size
  • Cut carrot into half, then slice each half into another half
  • Cut broccoli stalk from crown, slice into half, then cut each half into another half
  • Combine all veggie fries into a bowl, pour coconut oil, and season with desired amount of sea salt, black pepper, and garlic powder
  • Place on a baking sheet and top with parsley
  • Place in oven for 40 minutes
