BAKED CARROTS, CELERY, MUSHROOMS, & ONIONS


I'm on a bit of a celery kick. Its nutritional benefits are exceptional. I recently put a celery stem in my morning berry smoothie to pump-up the antioxidant level. Then for lunch, I whipped up something that wouldn't take long to prepare and cook. Baking veggies are my go-to for a quick meal, honestly. Below is a simple mix.

INGREDIENTS
  • 1 carrot
  • 1 celery stem
  • 8 white mushrooms
  • 1/2 yellow onion
  • Coconut oil
  • Sea salt
  • Black pepper
  • Garlic powder
  • Cayenne pepper

DIRECTIONS
  • Pre-heat oven to 425°F
  • Chop veggies and place in a bowl
  • Pour a generous amount of coconut oil over veggies
  • Pour sea salt, black pepper, and garlic powder over veggies, tossing in the bowl
  • Place on a baking sheet and sprinkle a little cayenne pepper over veggies
  • Place in oven for 20-30 minutes (I like my food a bit charred, so I kept it in for the full 30 minutes)
