MUSHROOM "SLOPPY JOE"


I love the Fourth of July. When I was a meat eater, it was a reason to eat as many burgers and hot dogs as I wanted. Now, I obviously can't do that! I'm heading to a Fourth of July celebration later, but like with any party, I always have to eat beforehand. I never really know if there are gonna be vegan and gluten-free options. Below is the recipe to a mushroom "sloppy joe" that I whipped up real fast. It's SO GOOD.

INGREDIENTS
  • Gluten-free hamburger buns
  • 1 red bell pepper
  • 4 handful white mushrooms
  • 1 small yellow onion
  • Fresh baby spinach
  • Cumin
  • Black pepper
  • Sea salt
  • Garlic powder
  • Oregano
  • Cayenne pepper
  • Coconut oil

PREPARATION
  • Slice up mushrooms, bell pepper, and onion
  • Toast gluten-free buns

DIRECTIONS
  • In a pan, add coconut oil, turn heat to high then reduce to medium
  • Add onions and saute with sea salt, garlic powder, and black pepper until transluscent
  • Add mushrooms, bell pepper, and spinach
  • Let vegetable sit for 30 seconds
  • Add desired amount of cumin, sea salt, garlic powder, and black pepper on top
  • Saute vegetables and let them simmer for 10-15 minutes, tossing around when needed, and add a sprinkle of oregano and cayenne pepper
  • Cook for another 5 minutes or until pan begins to get dry or sticky
  • Place mixed vegetables on hamburger buns
