I recently saw this Smashed Chickpea + Avocado Salad Sandwich recipe, and I knew I had to create something with chickpeas and avocados. Despite being a millennial, I couldn't care less for avocado toast or Chipotle's guacamole. Avocados are just green butter. Bland and smooth. Nevertheless, the health benefits of avocados are pretty impressive. Avocados are rich in fiber, good for bone health, improve the liver's function, and regulate cholesterol levels. But don't sleep on chickpeas. I love chickpeas. I could eat a whole can by itself. Chickpeas are filled with important nutrients; such as, fiber, protein, iron, magnesium, and more. Below is a simple recipe.

  • 2-3 avocados
  • 1 red tomato
  • 1 handful spinach
  • 1 can of chickpeas
  • Sea salt
  • Black pepper
  • Cayenne pepper
  • Garlic powder
  • Gluten-free bread

  • In a bowl combine cooked chickpeas, avocados, and chopped up spinach
  • Transfer to a blender, cut and add tomato
  • Sprinkle desired amount of sea salt, black pepper, and cayenne
  • Blend for 10 seconds or until items have slightly blended; mixture should be thick and chunky
  • Spread on a piece of toast or in-between two pieces of bread
  • Store the rest in an air-tight container and place it in the fridge
