OATMEAL WITH PESTO SAUCE


I recently moved and am in a space without a stove (grad school housing for the win, heh), so for a little bit all I had was a microwave. I didn't want to consume most of my meals via the microwave, so getting creative with my cuisine was very necessary. I ate a lot of raw foods—like this chickpea and avocado toast. Because oatmeal was something I could make quickly in the microwave, I decided to try to make my favorite food staple savory. The end result reminded me of grits. I love the combination of salty flavors with a thick porridge-like meal.

MAIN INGREDIENT

PESTO INGREDIENTS
  • 1 handful basil
  • 2 handful spinach
  • Juice from 1/2 lemon
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp sea salt

DIRECTIONS
  • Combine pesto ingredients in a blender and mix
  • Pour desired amount of sauce on oatmeal and mix
