If you don't know by now, I love a good one pot quinoa pilaf dish. They are easy and delicious. You can get so many nutrients in one bowl. Below is a meal I whipped up in less than 30 minutes and gobbled up in less than 10 minutes. Heh. The secret to this tasty dish is the avocado. This recipe has turned me into an avocado believer.

  • 1 cup tri-color quinoa
  • 1 can chickpeas
  • 2 long carrots
  • 1 medium-sized red tomato
  • 1 red bell pepper
  • 1 handful white mushrooms
  • 1 avocado
  • 1/2 yellow onion
  • Coconut oil
  • Black pepper
  • Sea salt
  • Cayenne pepper
  • Cumin
  • Garlic Powder

  • Chop all veggies and place aside
  • Add coconut oil to a large pot until melted
  • Place chopped up onions in pot and saute with salt, garlic powder, and black pepper
  • Once onions are translucent, add sliced mushrooms, season with cumin, adding a sprinkle of salt and black pepper, and saute for 5 minutes or until mushrooms create a liquid
  • Add carrots, tomato, and red bell pepper, sprinkle with garlic powder, salt, and black pepper, mix, and simmer for 5-7 minutes
  • Pour in can of chickpeas and simmer for another 5 minutes
  • Add avocado, sprinkle cayenne pepper, mix, and simmer for 5 minutes
  • Pour in quinoa and 1 cup of water (add more water if necessary)
