PAN-FRIED GREEN BEANS WITH OYSTER MUSHROOMS + CARROTS



Green beans are the best. I could eat them every day! They are relatively quick to cook and take very well to whatever spices you use. Below is a dish that takes about 30 minutes to cook while you watch a Netflix show. I was watching Siempre Bruja AKA Always a Witch (SO GOOD!) while the food was being prepared. Experimenting with making oyster mushrooms taste like meat, I added them to the meal. The result? A bowl of deliciousness.

INGREDIENTS
  • Green beans
  • Oyster mushrooms
  • Carrots
  • 1/2 yellow onion
  • Pink Himalayan salt
  • Black pepper
  • Cayenne pepper
  • Cumin
  • Curry powder
  • Garlic powder
  • Onion powder
  • Parsley flakes
  • Coconut oil

DIRECTIONS
  • Remove stems from green beans and chop carrots, mushrooms, and onion
  • Add coconut oil to pot on medium heat
  • Toss in onions and mushrooms, seasoning with desired amount of pink Himalayan salt, black pepper, cumin, curry powder, onion powder, and garlic powder
  • Cover pot and let it simmer 10-15 minutes, tossing around
  • Add green beans, carrots and parsley flakes, stir veggies, and add a pinch of cumin, curry powder, parsley flakes, and cayenne pepper
  • Cover pot and simmer for 10-15 minutes, occasionally mixing until veggies are soft and charred a bit
