Vegan Bolognese With Cherry Tomatoes And Yellow Squash




I am back! I have finally moved into a space that is all mine and I can cook up as many plant-based meal as I want. I recently made a meat-free bolognese sauce that was the bomb. I used chickpea pasta for this recipe, but really, the focus of this post is the vegan bolognese.




INGREDIENTS
  • 1 box cherry tomatoes
  • 2 yellow squash
  • Salt
  • Black pepper
  • Cayenne
  • Basil
  • Oregano
  • Parsley flakes
  • Garlic powder
  • 1 cup water
DIRECTIONS
  • Chop up tomatoes and squash and toss into a food processor
  • Throw veggies into a medium sized pot, stir
  • Add water, stir
  • Toss in desired amount of spices, stirring, tasting, adding spices to adjust to flavor liking
  • Simmer on medium for at least an hour or until sauce is thick and it is not that watery
